Guan Yu: On Hades spear, Athena's attack is good. On Guan Yu, I think it's mandatory unless you're doing a special-only cheese build, in which case I suggest that you pick a bow instead. I love this aspect but impossible for me to describe how to play it in a way that I'd call "correctly" without video. I only took this in 3 specific circumstances: Lightning Strike builds, Hangover-centric builds, and the Rama bow where you have to hit everyone with your special before bringing the real pain with the shared attack damage. Poseidon in attack is fun. The sweep passes through walls. Zeus ok special or Ares. Athena on attack is nice during stages with projectile foes but has diminishing use as you progress through bosses.
