With my own cavalry i have them in reserve and don't engage until after the enemy cavalry hits my infantry on most occassions.

Infantry only is perfectly viable provided you make sure you keep enough mounts in your inventory to keep your speed up, too many will slow you down so about 1 per soldier does the trick.
